What are Ramen Noodles?

Ramen noodles are a type of Japanese noodle that has become popular all over the world. They are made from wheat flour, water, salt, and kansui, which is an alkaline water that gives the noodles their distinctive texture and yellow color. Ramen noodles can be served in a variety of broths, with a variety of toppings, and are a staple food in many Japanese households.

One of the reasons ramen noodles have become so popular is because they are easy to make at home. With just a few ingredients and some practice, you can create delicious homemade ramen noodles that are just as good as the ones you can get in a restaurant.

What Ingredients Do I Need?

To make homemade ramen noodles, you will need:

  • 2 cups of all-purpose flour
  • 1/2 cup of water
  • 1/2 teaspoon of salt
  • 1 teaspoon of kansui (optional)

You can find kansui at most Asian grocery stores, or you can substitute with baking soda if you can't find it.

How Do I Make the Noodles?

1. In a large mixing bowl, combine the flour and salt.

2. In a separate bowl, mix together the water and kansui (if using).

3. Slowly add the water mixture to the flour mixture, stirring constantly until a dough forms.

4. Knead the dough for about 10 minutes, until it becomes smooth and elastic.

5. Cover the dough with plastic wrap and let it rest for at least 30 minutes.

6. On a floured surface, roll out the dough to your desired thickness. You can use a rolling pin or a pasta machine to do this.

7. Cut the dough into thin, noodle-like strips. You can use a knife or a pasta cutter for this.

8. Boil the noodles in a large pot of salted water for 2-3 minutes, or until they are cooked to your liking.

How Do I Make the Broth?

There are many different types of broth you can use for ramen noodles, but here is a simple recipe for a basic pork broth:

Ingredients:

  • 2 pounds of pork bones
  • 1 onion, cut into quarters
  • 1 head of garlic, cut in half
  • 1-inch piece of ginger, sliced
  • 6 cups of water
  • 1/4 cup of soy sauce
  • 2 tablespoons of mirin
  • 1 tablespoon of sake
